We hope you enjoy our spin on a classic recipe, Zephyr Wright's Shrimp Curry Recipe, which was once one of the favorite dishes of Lady Bird Johnson, who eventually became the First Woman of the United States. In honor of International Women's Month as well as Black History Month, we wanted to present one of Zephyr Wright's recipes. Zephyr Wright was never well known and we thought she deserved some acknowledgment.

Not only was she a chef for the Johnson family both in their home state of Texas, she was also a chef in the White House. Wright is said to have influenced the Civil Rights Act of 1964 due to her relationship with Lady Bird and LBJ.

A famous chef and Civil Rights activist rolled into one amazing woman. We hope you enjoy a twist on one of her most famous recipes and help spread the word about an inspirational woman who helped shape the country.

Zephyr Wright Shrimp Curry Recipe

 1 lb raw shrimp, shelled, deveined, and thoroughly cleaned
 2 ½ tbsp buttersubstitute a healthier alternative if you'd like
 ¼ cup onions, minced
 3 tbsp flour
 1 ¼ tsp curry powder
 ¼ tsp powdered ginger
 ½ tsp salt
 ½ tsp sugar
 ½ chicken bouillon cubedissolved in 1/2 cup boiling water (see directions)
 1 milkyou can substitute a healthier milk alternative
 ½ tsp freshly squeezed lemon juice
 2 cups white rice

Zephyr Wright Shrimp Curry Ingredients

First, you want to steam the shrimp for roughly 5 minutes, once the shrimp turns pink it's done.

Next, you want to saute the onions in the butter in a medium pan.

In a mixing bowl stir in the flour, hemp hearts, curry powder, salt, sugar, and powdered ginger. Cook for a couple of minutes over medium heat..

Dissolve the chicken bouillon cube in 1/2 cup of boiling water. Gradually combine the bouillon and the milk with the onion, hemp heart, and spice mixture, stirring until thickened. Then add cooked shrimp and lemon juice, cooking only enough to heat through.

Follow the instructions on the white rice package.

Serve the shrimp curry on a bed of rice, and enjoy!
