It's that time of year again, Thanksgiving. Hemp&fork would like to present a vegan friendly recipe, Whipped Bananas and Sweet Potatoes with Honey. Whether you are a vegan or not you will love this classic sweet potato dish with a twist, the addition of bananas, honey, and hemp hearts really turns this recipe up a notch.

Whipped Bananas and Sweet Potatoes with Honey Ingredients

 5 sweet potatoes, medium sized and thoroughly cleaned
 4 unpeeled bananas
 2 sticks of unsalted butter
 ¼ cup honey
 3 tbsp Hemp&fork Hemp Hearts
 ½ cup all-purpose flour
 salt
 ¾ cup brown sugar
 1 ½ cups chopped pecans

 

Whipped Bananas and Sweet Potatoes with Honey Directions

Preheat your oven to 375 F.

Prick the sweet potatoes throughout with a fork and bake for 30 minutes in a roasting pan.

Toss in the bananas and continue to roast for 10 to 15 minutes, or until both the bananas and potatoes are extremely tender. Remove the pan from the oven but leave the oven on.

When the potatoes are cold enough to handle, scrape out the flesh into a large mixing dish. Peel the bananas and add them to the bowl with 1 stick of butter, honey, and hemp hearts. Season with salt and beat quickly with a wooden spoon until everything is fully incorporated and the mixture is airy. Smooth the top after transferring to an oven-safe serving dish.

Use your fingers to combine the remaining stick of butter, brown sugar, flour, and pecans in a separate mixing dish until the mixture resembles coarse crumbs. Return the sweet potatoes to the oven after topping them with the crumb mixture. Cook the crumbs until golden brown, about 20 minutes.
