Vegan Garlic Mashed Cauliflower with Hemp Hearts Ingredients

 2 large heads cauliflower
 3 tbsp Hemp&fork Hemp Hearts
 4 tbsp vegan butteror olive oil
 4 cloves of minced garlic
 sea salt to taste
 black pepper to taste
 ½ cup unsweetened plain almond milk
Garnish
 Fresh parsley and/or chives
 Vegan parmesan cheese

Vegan Garlic Mashed Cauliflower with Hemp Hearts Recipe

Cut cauliflower into even florets and steam in a big pot with a covered steamer basket until extremely soft, around 15-20 minutes depending on the size of the pot and the size of the cauliflower florets. Remove from the heat and leave aside to cool somewhat.

In a small pan over medium-low heat, sauté the garlic in the vegan butter for 2-3 minutes, or until just barely browned. Take cautious not to burn yourself. You may also keep your garlic raw for a bolder, punchier garlic flavor. Remove from heat and put aside.

Place half of the cauliflower in a food processor and puree until smooth. The amount of cauliflower you can purée at once depends on the size of your food processor. Then add the hemp hearts, half of the garlic butter, and half of the salt and pepper to the food processor and pulse until thoroughly blended.

Taste and modify the flavor as desired, adding additional salt and pepper to taste, garlic for a strong garlic flavor, vegan butter for a buttery flavor, or almond milk to aid in the purée of the cauliflower. You may also add a little nutritional yeast for cheesy taste, or vegan cream cheese for richness.

Cover and keep warm in a mixing bowl or on a serving dish. Then, continue mixing and seasoning until all of the cauliflower is whipped and seasoned.

Garnish with herbs and vegan parmesan cheese, and season with salt & pepper to taste. Refrigerate leftovers for up to 3-4 days, or freeze for up to 1 month. Reheat in the microwave or a saucepan on the stovetop until hot.
