Hemp&fork would like to introduce our keto broccoli and bacon salad with hemp hearts. This delicious salad is packed with plant protein, and broccoli is an excellent source of vitamin C as well as potassium and fiber. This inexpensive and healthy meal is great for those of you on a keto-friendly diet.

This recipe pairs well with our Vegan Chickpea Hemp Burger.

Keto Broccoli Salad with Hemp Hearts Recipe

Salad
 3 3 heads of broccoli, please cut into bite-size pieces
 3 tbsp Hemp&fork Hemp Heartshttps://hempandfork.com/shop-2/?v=1d20b5ff1ee9
 ½ cup shredded cheddar cheese
 ¼ cup sliced almonds (toasted)
 1 quarter of a red onion, sliced
 2 tbsp chopped chives
 4 bacon slicescrumble after cooking
 kosher salt to taste
Dressing
  cup mayonnaise
 3 tbsp apple cider vinegar
 1 tbsp dijon mustard
 Kosher salt to taste
 ground black pepper to taste

Keto Broccoli Salad with Hemp Hearts Directions

In a medium pot bring 6 cups of salted water to a boil. While waiting for the water to boil, fill a large bowl with ice water.

Add broccoli to the boiling water and cook until tender, approximately 1 minute. Remove broccoli with a slotted spoon and immediately place it in the ice water. When cool enough, spin the broccoli in a salad spinner. You will most likely need to spin it at least twice.

In a medium bowl, combine dressing ingredients using a wisk. Season to taste with salt and pepper.

Combine all salad ingredients in a large bowl and add dressing. Toss until ingredients are combined and fully coated in dressing.

Fry the bacon, crumble over salad, and serve.
